In our latest episode of Cooking with Vlada, we travel to the vibrant coastal city of Rosarito, Mexico, to experience the rich culture, warm hospitality, and unforgettable cuisine of our neighboring country. More than just food, this journey is about discovering traditions, meeting inspiring people, and bringing authentic flavors home.

Our adventure begins at a bustling local market, where we explore the incredible variety of fresh fruits, vegetables, herbs, spices, and local specialties that are part of everyday life in Mexico. Compared to many supermarkets in the United States, the market offers an impressive selection of locally grown produce, reflecting Mexico’s rich agricultural heritage and deep connection to fresh, seasonal ingredients.


Of course, no culinary adventure would be complete without trying something unexpected. This time, we stepped outside our comfort zone and sampled one of Mexico’s most unique snacks—fried grasshoppers, or chapulines. While the idea may surprise many Americans, edible insects have been enjoyed for centuries in many cultures around the world. They are rich in protein, vitamins, and minerals while requiring far fewer natural resources to produce than traditional livestock. As interest grows in healthier and more sustainable food sources, insects may become an increasingly important part of our future diets.

Next, we visit one of Rosarito’s oldest and most beloved restaurants, El Nido, where authentic Mexican cuisine has been delighting guests for generations. There, we enjoyed a memorable meal filled with traditional flavors and recipes that have stood the test of time.

One of the highlights of our visit was sitting down with the restaurant’s owner, Mr. Lopez, who generously shared his remarkable story. He spoke about the challenges he faced while building the restaurant, the perseverance it took to succeed, and the importance of never giving up on your dreams. His journey is a powerful reminder that determination, hard work, and passion can overcome even the greatest obstacles. His message of hope and encouragement is one we believe will inspire viewers of all ages, especially younger generations pursuing their own dreams.

After returning to the United States, we couldn’t wait to bring those authentic flavors into our own kitchen. In this episode, we recreate two beloved Mexican classics—tamales and chiles rellenos—sharing techniques, tips, and the joy of preparing these traditional dishes at home.
